Strawberry Rhubarb Breakfast Bar

Strawberry Rhubarb Breakfast BarsStrawberry rhubarb filling, almond crust, almond-oat topping. Home-made by me. Recipe below.


1 cup chopped nuts

1 1/2 cup flour

1/2 cup sugar

1/2 tsp salt

4 tbsp butter, cut in small pieces

1/2 cup oats

1 egg

2 tbsp vegetable oil

1 tsp vanilla extract

1/4 tsp almond extract

3 cups chopped strawberries

3 cups chopped rhubarb

1/4 cup orange juice

1/2 cup + 2 tbsp sugar

1/4 cornstarch

1 tsp vanilla extract

Combine the first six ingredients in a food processor. Reserve 3/4 cups for topping. Whisk egg, oil, vanilla extract, and almond extract, then add to dry mixture. Press firmly into a 9 x 13 pan. Cook 2 cups strawberries, 2 cups rhubarb, orange juice, sugar, and cornstarch in a medium pan until thick, about ten minutes. Remove from heat, add vanilla extract. Pour over crust. Mix reserved dry mixture with oats, sprinkle over top. Bake at 400 F for 15 minutes, reduce heat to 350 F and bake for 30 minutes more. Let cool completely before serving.

  1. Strawberry rhubarb pie is one of the best inventions ever created for pies and this breakfast bar looks like it would be just as amazing. Thanks for sharing, I’m totally going to try this recipe, it looks delicious.
